DeWine: R&D project to dealcoholize wine

Within the OsmoFOOD project, which was awarded with funding from the SME Instrument of the European Commission, LEF Ingenieros is working on the development of DeWine technology: an innovative process to dealcoholize wine.

The peculiarity of the technology lies in the use of special membranes to dealcoholize in mild operation conditions, which allow to preserve the original aromatic profile and obtain an eco-efficient process in energy terms. LEF Ingenieros is working on this project together with Professor Joan Llorens Llacuna of the Faculty of Chemistry of the University of Barcelona and Leitat.

The tests carried out so far have seen promising results. The processed wine has been analyzed chemically and organoleptically and has met expectations, containing 33% less alcohol, assuming a clear benefit for the health of consumers without compromising its organoleptic quality. From now on, LEF Ingenieros will work on the scaling and validation of a prototype on an industrial scale.
